Dining Hall Hacks

It’s the end of October and even with all the options at the dining hall, you find yourself going back for that same slice of pizza you got for lunch. If you’re looking for some tips on how to up your dining hall game, we’ve got your back. We found five recipes that will refresh your taste buds and save you from yet another dinner of chicken tenders and mac & cheese. All of the following dining hall hacks utilize food items available at the dining halls here on campus.

Not Your Freezer’s Pizza Bagels

If you’re feeling nostalgic for the bagel bites of your youth, this trick is for you. Grab a bagel and acquire your choice of shredded cheese from the salad bar. Grab some marinara sauce and spread it over your bagel. Top that with the cheese, and throw it in the microwave. After about two minutes, you should be kicking it back to your bagel bite glory days. Remember to clean up after yourself and don’t leave a mess in the microwave! This also works with english muffins.

(Almost) Portillos Cake Shake

If you’re looking for a sweet treat and missing Chicago’s favorite dog house, grab a cup for this next concoction. Mash up a piece of cake, pie or a cupcake inside. Add your choice of soft serve flavor (or do a twist). Add milk until you’ve reached your desired thickness. Mix it all up with a spoon. Due to the need for ice cream, this recipe can only be created at Harris Dining Hall or Martin Dining Hall.

Take a Dip!

If you’re looking to stay healthy and try new flavors, try this take on a Thai-style dip for grilled chicken or veggies. After cutting up some healthy and delicious grilled chicken or obtaining some broccoli, grab a few peanut butter packets and empty them onto your plate. Add some soy sauce and Sriracha until you have a thinner consistency for a fun update to this dining hall staple.

All Veggies, No Eggs … On Your Pasta

If your taste buds are getting a little too accustomed to buttered noodles, try adding broccoli and carrots from the salad bar to your next plate of plain pasta. Then, top with salt, pepper, and olive oil (which can be found at the salad bar). Don’t forget to finish it off with some parmesan cheese for your own, personal pasta primavera.

For a dining hall take on a classic italian dish, look no further. Put breaded chicken (chicken strips, homestyle, etc.) on a bun. Grab a few slices of cheese, but leave them on the side for now. Get some marinara sauce and add hot sauce until you’ve reached your desired spice level. Put this spicy marinara on top of the chicken and layer the cheese on top of that. Now you’ve got a delicious, handheld chicken parmesan.

On The Road At Downing Fruit Farm

This past Sunday, I had the opportunity to take a drive to New Madison, Ohio and find the home of Miami University’s locally grown apples and pumpkins, Downing Fruit Farm (photo gallery below).

Downing Fruit Farm has been discussed on this blog before. The family-owned farm has been around since 1838, located in the village of New Madison, Ohio. According to Google Maps, the fruit farm is right around an hour from the Demske Culinary Support Center, just over 40 miles north of Oxford in Darke County.

The farm is, as you might expect, in the middle of farm country. The roads leading out there are winding, the fields are rolling and the people are scarce. As I made the final turn, the road dipped and bent one more time and the GPS – rather abruptly – announced, “You have arrived at your destination.” All that was before me was the road that extended further beyond, and a small mailbox on the side of the road. To my right was a quaint little farmhouse. There isn’t any sign or billboard, just a gravel path.

A drive leads up towards the central barn/shop/storage area and wraps around, providing parking and a glimpse at the different structures found on the farm that were initially hidden from the road. Families, both old and young, bustle about the space, the bright orange of the pumpkins scattered around the barn reflect the bright autumn sun while the trees provide a picturesque scene of a beautiful, natural farm. The entire setting reflects a level of authenticity that, for some reason, I didn’t really expect.

“Around 30 years ago, most of the business was done at the farm,” says Scott Downing, a seventh generation Downing who currently owns and maintains the farm. “I’d say about 75% of sales were made at the farm. Now, it’s closer to 25%. You just don’t get the Sunday drives like you used to have.”

My Sunday drive was eye-opening. While people love and embrace the concept of “local”, we sometimes lose touch with what that really means. The pumpkin on campus, used in the pumpkin smoothies and milkshakes – or even the locally grown apple available on campus – is grown and sold at a family farm only an hour from Oxford. A lot of hard work and time goes into ensuring the quality of their food. In addition to the work they put into preparing their products, the Downing family also creates other opportunities to reach out to new audiences by frequenting local markets like Oxford’s farmer’s market on Saturdays.

“Going to Miami… going to the market down there. We do fantastic down in Oxford at the market,” says Downing, who travels to various markets throughout Western Ohio during the week, selling his local fruits, vegetables and apple products, including apple cider that was once voted the Best Cider in the country.

At the farm, there is a definite homely feel between the natural, fresh products, the setting and people there. There are families with young children who are taking horse drawn wagon rides through the orchard or getting their face painted and older families with teenagers who have been to the farm every year since they were the ones with the smiling pumpkin painted on their cheek.

The central barn area acts as a family store and is stocked with apples and apple products, which make up nearly 70% of the Downing’s sales. A table in the back sells hot dogs and iced apple cider. The walls are lined with a variety of items, ranging from the familiar apple butter or cider to different jars of preservatives made from their own fruit or their very own fresh pumpkin butter. The quality and freshness of the products available are on display as visitors pick up entire bags of apples, pumpkins and a gallon of apple cider.

“We raise the highest quality of whatever we do, whether it is peaches, plums, apples or pumpkins,” says Downing, “It’s pretty satisfying to know that people appreciate and enjoy the taste and quality of our products.”

Downing can be found at the Oxford farmer’s market on Saturdays uptown, selling apples, etc. His products can also be found on campus in the form of the local pumpkin smoothies, available at King Cafe, Bell Tower and Miami Ice, and the pumpkin milkshakes available at Encounter. The Moon Co-Op, located near T.J. Maxx, also sells Downing Fruit Farm products.

They weren’t using the machine below while I was there, but let’s face it… it looks really cool.

What’s New on the Menu? – Bell Tower, La Mia Cucina, Dividend$, King Cafe (2015)

This “What’s New” covers a variety of dining options. We have already checked out Armstrong and Maplestreet Station, but now it is time to see what is coming this fall to Bell Tower, La Mia Cucina, Dividend$ and King Cafe.

Bell Tower

Most of Bell Tower’s menus remain the same from last year with a couple neat additions. First of all, Bell Tower is a location impacted by the campus-wide introduction of turkey sausage. It will be offered for breakfast. However, the station that will be adding the most to the menu this fall is the Campus Grill station. A seafood specialty item has been added with calamari, fried to order, and fried tempura shrimp being available on alternating weeks for those who would like a taste of seafood. Mini corn dogs are back and better than ever at the Campus Grill. They will alternate daily with onion rings. Also, a Philly cheesesteak sandwich will now be served at Bell Tower from this station.

The Pizza Pi station also is getting a few exciting additions to the menu with dessert pizza slices now available. There will be apple dessert pizza and cherry dessert pizza offered at Pizza Pi on alternating weeks to satisfy your sweet tooth!

La Mia Cucina

The big news here is that La Mia will be taking over pizza delivery from Sundial. This doesn’t impact the pizza itself, but will help streamline and improve service. La Mia will begin the fall offering seven different pizzas to focus on timely, and high-quality service.

Additionally, La Mia will now be open until midnight, in part, to cater to its new role as a pizza delivery service.

Dividend$

There is hardly anything changing at Dividend$ for the fall. Motz Monday, Corn Dog Tuesday, Wings Wednesday, Calamari Thursday and Chilly Cheese Fryday will exist in their entirety (Monday-Friday), which is always fun. Also, a steak and egg panini will be offered daily during breakfast while a steak and roasted veggie panini will be available for lunch daily. Both panini’s were offered last year, but this will be the first time they are both served daily (last year they were served on a rotation).

King Cafe

King is unchanged, still offering you sanity in the form of caffeinated beverages while you study for that exam you conveniently ignored until the night before.

A Place to Explore: Bell Tower Place

As great as the new restaurants on campus are, we can’t forget about those that have been old favorites here. The traditional place on campus we recommend you visit today is Bell Tower Place.

Lots of quick options here!

The Bell Tower dining venue is located halfway up High Street, near its namesake Bell Tower. Its location is perfect for both on-campus and off-campus students. Upperclassmen—this is a great place to grab coffee or breakfast in the morning on your walk to class.

Hours of operation: Monday-Thursday 8am-8pm; Friday 8am-2pm; closed on weekends

If you’re interested in pizza, pasta, sushi, a burger, a donut, coffee, cake, a smoothie, onion rings, yogurt, a burrito, tacos, quesadillas, guacamole, egg rolls, a deli sandwich, stir-fry, fruit, or soup, Bell Tower Place is the place to be.
